Tartare of fassona and truffle

Tartare of fassona and truffle is a dish that wins you over with its elegance and the quality of its ingredients, making it ideal for special dinners and important occasions

Ingredients for 2 persons:

-200 g beef (fassona)
-q. b. Sliced Bernardini summer truffle
-1 clove of garlic
-1 anchovy
-2 tbsp extra-virgin olive oil
-q. b. salt, pepper and lemon

Procedure:

  1. Cut the meat first into slices, then into fillets and finally into very small cubes and finish by beating with a knife.
  2. Heat the oil, garlic clove and anchovy in a small pan. Do not sauté, only heat slightly to get the odours. Cool and strain the oil.
  3. Put the meat in a bowl and season with salt, pepper, lemon and the filtered oil. Mix well and serve.
  4. Season with a drizzle of raw oil, a little salt and add the Bernardini summer truffle slices.
